Waldorf Chicken Salad
Not the REAL thing, but still a great chicken salad.
I had some friends over for lunch the other day and made this. We enjoyed it in Whole Wheat Pita Pockets. They all wanted the recipe - so here you go... I'm making this for lunch tomorrow, so I will try to remember to take a picture! (picture added)
Waldorf Chicken Salad
Ingredients:
1/4 Cup low-fat mayonnaise
1/4 Cup 1% buttermilk
2 tsp sugar
1 1/2 tsp cider vinegar
1/8 tsp salt
1/8 tsp cayenne pepper
1/8 tsp pepper
1/4 Cup crumbled blue cheese (I used feta)
2 TBS grated onion (I used dried minced onion)
3 Medium apples
3 celery ribs, chopped
1/2 Cup raisins, loosely packed (I used about 30 grapes, cut in half)
1/4 Cup chopped walnuts
1 Pound Skinless, boneless chicken breast
Procedure:
1. Boil chicken and let cool; dice into bite-sized pieces.
2. In a small bowl, whisk the mayonnaise, buttermilk, sugar, vinegar, salt, cayenne and pepper. Stir in blue cheese and onion.
3. In a large bowl, combine the apples, celery, raisins, and chicken. Drizzle with dressing; toss to coat. Sprinkle with walnuts.
Yield - 6 - 1 Cup servings
Cal - 260 Fat - 9g (Sat 2g) Protein - 21g Carbs - 25g Fiber - 4g Sodium - 283mg
Exchanges = 3 VLM (very lean meat), 1 1/2 fruit, 1 1/2 fat
