Fish Parmesan

It's been a while since I've posted a recipe. This was another fast easy fix. It was simple this evening because Landon and I were eating solo. On the evenings that Shannon is gone I just don't do a big dinner. Landon doesn't eat much, and I can't justify the fuss for just myself. Since I was just making 2 pieces of fish I split the recipe in half (I know that half makes 3, but it was easier to cut in half than in thirds!).


Fish Parmesan
Ingredients:
6, 6.5 oz pieces of white fish (I used tilapia)
2 TBS green onions
1/3 Cup low fat mayo
3/4 Cup Parmesan Cheese
1/2 tsp hot pepper sauce (I didn't use)
4 TBS lemon juice

Procedure:
1. Preheat oven to 425 degrees
2. On a non-stick broiler pan (I used Corning ware) arrange fish and brush with lemon juice.
3. Combine onions, mayo, cheese, and hot sauce in a small bowl.
4. Spread 1 1/2 TBS of cheese mixture evenly over fish.
5. Bake fish in oven for 8-10 minutes or until fish flakes with a fork. To brown the cheese, change heat to broil, and broil fish for 1-2 minutes, or until desired color.

Yield: 6 (5 oz) servings

Calories - 220 Protein - 31g Fat - 9g Sodium - 364mg Carbs - 2g
