It was a huge task to take on after 9:30 on a school night!!

Bakerella gives complete instructions on her blog - but here is my quick run down.

Bake a cake (flavor of your choice - I chose Red Velvet). Let it cool completely (I tossed it in the fridge). Crumble the cake and put it in a large bowl. Add one container of icing (flavor of your choice - I chose Cream Cheese). You can use a spoon to mix this - but I found it was easiest to get in there with your hands like you were mixing a meatloaf!! Dirty, but fun!!

Roll the cake mixture into balls (or eggs in this case) and put on a cookie sheet covered with wax paper. Place in the freezer until firm enough to handle. I then removed them to insert the Popsicle sticks. Then I placed them back in the freezer for about 20 more minutes to get them nice and firm before dipping.

Melt candy melts (flavor of your choice - I chose vanilla) in a bowl. You want enough melts so that you can cover the "egg" completely when dipped. Gently tap off the excess candy coating (don't tap too hard or the cake ball will fall off into your candy melts!) until smooth (or as smooth as you can get it) - next time I will use the Paramount Crystals to make the mixture coat more smoothly.
Set them in a "Styrofoam block" to dry - I didn't have a Styrofoam block so I used a box I received in the mail from a photography order that came in; it was large enough to hold a majority of the pops. I poked holes in the box with a screwdriver!

After the candy coating is cooled and hardened decorate to your heart's content. I used Light Corn Syrup as the "glue" for these. Then I sprinkled with sanding sugars and sugar confetti.

I only made half the batch this evening and will dip and decorate the other half tomorrow night when Landon can help me. This first batch was for a luncheon at school.

All in all this project took me just over 4 hours. I didn't even decorate half the eggs. I would say we have another 2 hours of dipping and decorating we will do tomorrow night!!
