German Pancakes

Getting back to my German Roots (I guess), I decided to make some German Pancakes this morning. I've been craving them for some time, and I finally took the time to make them. Simple easy, but get ready to whisk, whisk, whisk!!! The recipe calls for an iron skillet, but I don't have one. I know they should take away my Southern Cook Card immediately. I've just never bought one. I use a glass pan.
German Pancakes
3 eggs
1/2 C. sifted flour
1/2 tsp. salt
1/2 C. milk
3 Tbs melted butter
Lemons (or lemon juice)
Powdered Sugar

In larger bowl:
Beat Eggs
Add milk - beat together

In smaller bowl:
Combine Flour and Salt, sift together

Slowly sift Flour mixture into the egg/milk mixture, WHISKING CONSTANTLY. You do not want the flour mixture to clump up on you.

Pour melted butter in skillet. Pour egg mixture into skillet and put in oven.

Bake on 450° for 12-15 minutes.
Watch it the last few so the edges don't burn, but you want the middle to be done. It looks pretty cool while cooking. It puffs up really big. I wish I had taken a picture of it in the oven, it begins to fall immediately when you take it out of the oven.

While it is still warm, squeeze lemon juice on the pancake and then sprinkle with powdered sugar (to taste). Not only does it Look Cool, but it tastes great.




It serves 2 or 4 depending on how you slice it. I usually eat half of one, but if your adding more to your plate, a 1/4 will be plenty.
