Candy Land, Cakes, and Globes

Tonight Shannon came home from another week on the road...we're used to it, but we LOVE when he comes home. Landon really enjoys it when Daddy plays games with him, but when we all play as a family - we all love it. Tonight Landon AND Shannon played their first game of Candy Land. Shannon doesn't think he's ever played this game before. Now, Chutes and Ladders, he's got that one down!! I won of course - see my little Green man at the Kandy Kastle?? Landon was one card behind me, and poor Shannon who was in the lead at the beginning got bumped all the way back to the Candy Cane Forest there at the end. So sad.
Tonight I baked a cake for Shannon. I wanted to do it last weekend when he was home, but it didn't happen. So, this week I got all the items needed (three things - simple easy cake!) and was going to have it ready for him when he got home. I thought he would beat us home this afternoon and I wanted it waiting for him when he walked in. Well, things didn't go as planned last night or this afternoon - for either of us, so we had to wait until after dinner. But it was good anyways.
White cake with raspberry filling and cool whip for frosting. A light, healthier option - if you're going to eat cake, it's a good choice. And SO easy to make. You can take the even healthier option and use a sugar free cake mix, sugar free preserves (no sugar added) and Light Cool Whip. I didn't.
Why such a delicious cake? Well, I was so proud of Shannon for winning the CEO Award the week before at his Sales Conference in Ft. Lauderdale. This is the highest award given each year throughout the entire company. I know Shannon works very hard, is a really smart guy, and gives 110% everyday. I was so glad that every top ranked person in his company sees that he is an amazing guy. I've known it for years. I don't have a nice shiny globe to give him, so I gave him a cake!!

oh man. we've played a bazillion games of CandyLand since Christmas. Please sent our congrats! to Shannon. Wish we were closer to taste that delish cake. YUM.
